If a recipe calls for a certain type of flour and all you have is all-purpose, some manufacturers recommend using 1 tablespoon more per cup when making breads and 1 tablespoon less per cup for cookies and biscuits. This will increase or decrease the total amount of protein going into the batter or dough.
Here’s a guide: If your recipe calls for 1 pound of all-purpose flour, use 3 1/3 cups. If your recipe calls for 1 pound of cake flour, use 4 1/2 cups. If your recipe calls for 1 pound pastry flour, use 4 1/4 cups.

A “cup” of flour should weigh 125 grams/4.40 ounces, so let’s see how we did. Most, if not all bakers that I follow, also use the weight of 125 grams for a one cup bulk measurement. If you prefer to measure in ounces, the weight in ounces is 4.41, which interestingly enough, is what the King Arthur websites says.
Flour settles easily, becoming tightly packed inside a bag or jar. In order to make sure you’re not scooping up packed flour, you should fluff it up with a spoon or fork before you measure it. Second, spoon the flour into the measuring cup. Gently pile it in until it forms a heap above the rim of the measuring cup.
For example, if a recipe calls for 2 cups of self-rising flour, you would mix together 2 cups of all-purpose flour, 3 teaspoons baking powder, and ½ teaspoon salt. You can also scale the recipe up to make a larger batch of DIY self-rising flour and store it for later use.

For best results, we recommend weighing your ingredients with a digital scale. A cup of all-purpose flour weighs 4 1/4 ounces or 120 grams.
Stir your flour in case it is packed tightly into its container. Then, use a spoon and lightly spoon the flour into your measuring cup. Use a flat straight edge (like the straight back of a knife) to level off the top of the flour. Repeat until you have a smooth (not pock-marked) flour surface.
If your recipe calls for more than 1 cup self-rising flour, use the following formula: For every 3 cups all-purpose flour, mix in 2 teaspoons baking powder. If the recipe does not call for salt, add 1/2 teaspoon of salt.
To get the ratio right to making your homemade version, add two teaspoons of baking powder for each 150g/ 6oz/ 1 cup of plain flour. Make sure you combine the baking powder thoroughly by using a sieve and mixing it together in a bowl so it’s aerated and evenly distributed.
Simply add two teaspoons of baking powder for every 100g of plain flour and mix until completely combined. Congratulations, your self-raising flour is made.
