9×13 inch pan holds 14-16 cups of batter, essentially the same as 2 9×2-inch round pans.Jan 20, 2020

An 8” square pan and 9” round pan can be used interchangeably for cake and bar recipes. A recipe written for a 9” x 13” pan can also be made in two 9” round pans; one 9” round and one 8” round, or two 8” round pans.
How Many Quarts Are in a 9×13 Pan? Assuming the 9 by 13 inch pan has sides about 2 inches high, it can hold a volume of 14 to 15 cups. Since there are 4 cups in 1 quart, the pan holds between 3 1/2 and 3 3/4 quarts.
|Approximate Pan Dimensions (inches)||Approximate Volume (cups)||Approximate Volume (milliliters) (ml)|
|8 x 8 x 2 inches||8 cups||1.9 liters|
|9 x 9 x 1 1/2 in.||8 cups||1.9 liters|
|9 x 9 x 2 inches||10 cups||2.4 liters|
|10 x 10 x 2 inches||12 cups||2.8 liters|
For example, if a 9×13 inch pan is 117 square inches and a 9-inch round pan is 63.5 square inches, you can be confident that the volume from one 9×13 inch pan can fit into TWO 9-inch round pans (approximately 120 square inches total).
My thoughts: The 9×13-inch rectangular casserole pan is by far the most called-for dish in casserole cookery, followed closely by the 8×8 (or 9×9) square dishes. (The 9×13 also holds about 3 quarts of volume, so in some recipes it can be used interchangeably with a 3 quart Dutch oven, like this one.)
The area of a 9×13 pan is 117 square inches. The area of a 8×8 pan on the other hand, is 64 square inches, or close to half that of a 9×13 pan. This means you can scale a recipe down from a 9×13 pan to an 8×8 pan by simply halving the recipe.
You’re really in luck when it comes to using an 8×8 pan: it’s almost exactly half the size of your larger casserole dish! A 13×9 pan measures 117 square inches of surface area, which will hold about 14 cups of food. The 8×8 pan’s 64 inches of surface area can contain up to 8 cups.
You can substitute baking pans as long as they have sides but your pan seems small compared to the suggest jelly roll pan. You might want to think about using parchment paper if you have some on hand.

It would seem like a no-brainer that doubling a 9″ x 13″ recipe would be perfect in a 13″ x 18″ half-sheet pan. After all, 117 x 2 = 234 exactly. All the beauty and perfection that is mathematics says it should work, but there’s one hitch.
When halving a basic 9×13 casserole, cut the recipe in half and bake it in an 8×8-inch pan. One final tip: If a recipe calls for just 1 egg, still include that entire egg when halving the recipe.
For the cake:
Carefully stir the boiling water into the cake batter and pour into the prepared 9×13 dish. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the center comes out clean.
The standard 9-inch by 13-inch cake can be made with one box of mix. A 12-inch by 18-inch sheet pan uses 14 cups of cake batter, requiring just over two boxes of cake mix.
Think about whether the recipe should even be changed.
The batter is not finicky, and because you’re not worried about them rising much, you can easily use a 9-inch pan instead of an 8-inch or vice versa.

Remember the most common number of servings per 9 x 13 people is 8. So expect you can feed 8 average adult appetites with one pan. The second group are big eaters and are going to probably eat two slices.
The 9×9 pan = a kitchen staple. For a dish that will bake bars, cakes, and casseroles—and look good, too—here are the pans to buy. The 9×9 pan = a kitchen staple. For a dish that will bake bars, cakes, and casseroles—and look good, too—here are the pans to buy.
How many brownies does a 9×13 pan make? Depends on the size of the pan, scaling of the recipe, and the appetite of the diners. If it’s a regular recipe or a boxed mix, it will likely be a 9×9 pan, which I usually cut into about 9 bars, or a 9×13 pan, which I usually cut into 12 servings.
One package cake mix yields about 4 cups batter.
An 8 x 8 square pan is 64 square inches, and I’ve often doubled recipes by using a 9 x 13, which is 117 square inches. Usually the baking time is only marginally longer. To double a 9 x 9 pan and bake in a 9 x 13, would yield a taller end result of the cake, and no doubt need a longer baking time.
Jelly Roll Pan Substitute
While it is best to use a jelly roll pan if your recipe calls for it, a half sheet pan is a similar option.
about 15.5-by-10.5 inches
Measuring in-between a half-sheet and quarter-sheet pan, jelly roll pans typically measure about 15.5-by-10.5 inches. They’re the pans you often find (cheaply made) at grocery stores, but good quality ones can be purchased for not much more money.Sep 10, 2018

Good thing most recipes for 9×13 baking dishes are meant to serve crowds. Whether it’s cake recipes, holiday dishes, or just classic casseroles, these large baking pans can hold and cook almost anything you’d want. You can marinate chicken or beef in one of these pans, roast vegetables, even bake a pie.
I yelled to Bob, “What’s half of a 15-by-10 jelly roll pan?” Bob yelled back, “Use your 11-by-7 pan.” He figured the area by multiplying the length by the width of the pan, getting 150 square inches. Half of that amount will fit comfortably in the 11-by-7 rectangle, 77 square inches.
